I think that both Plo Koon and Shaak Ti would work very well together as they are good friends. Dooku would be on the defensive and his old age would tire him out. Out of the three Dooku is both the most powerful and the most skilled force user, however, he's gonna have to deal with two combatants here. In my opinion Dooku is the best duelist. I think the two Jedi could outlast Dooku and wear him down.

Junior Novelisation tells a very different story from the actual novel, Dooku was forced to lavishly spend his reserves to compensate. He physically felt as if he was being hit with the Force of a meteor strike. Anakin would definitely have outlasted him.
Pretty sure in the novel, after blocking Anakin's "meteor strikes" he replenishes his reserves by drawing upon the force.
Anyway, Dooku is beyond these clowns. He wins easily.

Wrong, honestly.
The fighting style of Kenobi and Skywalker lends itself to be perfectly countered by Dooku. He's never solidly beating them together, he separates them and 1v1's, because Anakin's style is that of one that is aggressive, and leaves him open to be knocked back or pushed away. Kenobi is too defensive to push an attack in a way that Windu would.
While Kenobi and Skywalker may individually be better duellists, and perhaps even a better team, against Dooku they have exploitable disadvantages that Ti and Koon do not.
Ti and Koon win.
