The Crusades were a response to the Muslim conquests, which saw the Eastern Roman Empire getting wrecked by first the Arabs and later the Turks. Had the Isaurian and Makedonian dynasties not stalled the Abbasid advance, I'm pretty certain the ERE would have fallen much sooner.
Starting with the Rashisdun caliphate, Islam went on a warpath and carved out one of the largest empires in the world at the time. Zoroastrian Persia, the Eastern Roman Empire, North African Christians, the Visigoths. The Umayyads would have gone even farther had Charles Martel not kicked their shit in at Tours.

The founding fathers new nothing about this devout group of people that are trying to take over the world.

It's true many of the founding fathers professed Christianity, but I wouldn't go so far to say this country was founded solely on that reason. Those men were products of the Enlightenment. Humanism shaped much of their mindset in founding and governing this country.
However, they would not stand for how this country is run today.

Many parts of both the Constitution and the Declaration of Independence mention God and the overwhelming majority, if not all, of the people in the country back then we're Christians. But yeah, the U.S. is not a theocracy and never was. Nor is it a democracy like so many people mistakenly believe. It's a Constitutional Republic. Always has been.

I agree with you, but America is not a theocracy. The founding fathers were influenced by the Age of Reason as much as they were by Christianity. That is one reason for separation of church and state. Many of them were freemasons too, and I've read a lot of interesting stuff about that that I won't get into here
