So if/when Thor is defeated (likely, as he'll be fighting a CiS off duo of Surfer and Supes), he'll just leave the body of Thor and goes for the next one. And so on.

Basically, yes. I've seen it fail before, when Doomsday was mindless (so nothing to possess), Constantine (who had prepped for him)...so it's not 100% infallible.

And before he possesses, he's completely invisible to all senses (as in, he's a ghost) and completely intangible.
