I forgot which novel it was, but there was the suggestion that the only reason Vader couldn't heal his mustafar injuries was due to his mindstate. Therefore, redeemed Anakin is ideally on par with full potential Anakin, making this a stompfest regardless.

He has to reach that potential first, getting a different mindset and being fully healed wouldn't make him reach that potential, he'd have to earn it through training.
