I get she restored their colour. But I'm still a little lost on why they were white. Was that just the natural colour of these particular crystals, or is that the colour of all crystals, and they turn blue or green for Jedi?

Yeah I like that as well. And makes more sense of why these Force users hold the Lightsaber in such high esteem and are even told to be attached to their Saber "this weapon is your life".

The clone wars started the concept though (in canon at least).

It translate the idea that she's not a Jedi (blue - green - yellow - ...) but still a light side user since the crystals changed from red to white.

I think that in Canon the crystals don't have a natural color but they adapt the color which fits the person that uses them or something like that.

Knightfall Anakin, Grievous, Luke? This is such an inconsistent bullshit.

It apparently takes a while for a Darksiders to crystal to corrode away until it's beam is red. Which explains Knightfall Anakin.

But Ahsoka's changed colour to white way too quickly.

Luke had a blue lightsaber for like, what, 3 years? And it only turned green when he made a new one. Grievous also used jedi lightsabers for 3 years without any change. I suppose that could be written off by saying Grievous is not a force sensitive.

Yeah they obviously don't just change colour like that.

she took an Inquisitors crystals. Apparently the dark side blackens the crystals and makes their beam red or some shit. The Inquisitors crystals called out to Ahsoka and once she got hold of them she "purified" them in seconds. Kinda weird.

Cleanse is the name apparently

Ahsoka actively purified the crystals herself, IIRC. No one else in canon actively attempted to corrupt or purify their crystals, so it's not like it's some inconsistency in canon.
