It should actually be a good fight since Sion scales off other Force users. He'd fare at least as well as Qui-Gon in terms of pure skill, and he's stronger than Qui-Gon too, so I doubt Maul's physicality or unorthodox weapon would pose as much of a problem. Otherwise, Maul's generally better.
I'm assuming Sion can't come back here. Otherwise, it's a battle of attrition and one that Maul, for all of his incredible resiliency, isn't going to win.
When I said "Sion scales off other Force users", I mean he uses Drain to feed off others and becomes more powerful in accordance to how strong his opponent is in the Force. The idea is that "the stronger you are, the stronger the assassins are" - and Sion's the leader of the assassins. TPM Maul isn't the sort of Traya-tier Force user who can just punk Sion into oblivion.
Meetra was just rendered defenseless from the Crush beforehand, and the Lightning from the two Sith Lords nearby (who should've been two of the strongest of their time) was also part of it. Maul's kind of more resilient than Meetra (at this point, at least) too.
Is that even part of the game files? I'll have to check it later. I can't even recall if M4-78 was cut due to time constraints or just flat-out not being wanted. Either way, apparently M4-78's been changed so that Sion no longer makes an appearance there. We do know that Meetra has one of those "near-death" incidents anyway, possibly on another planet (Nar Shaddaa or something, I think).

It was originally Nar Shaadha where he attacks her and everybody thinks she is dead afterwards. Though you raise a decent point.
