Its not Star Wars, but I'll use Kenpachi Zaraki as an example. Even against very real threats, he loves fighting people on his level.
Also, that doesn't mean anything, because shortly after that, Anakin starts ****ing Dooku up again. You also forget the part where Dooku got scared shitless of KENOBI and Anakin once they got serious.

Not really. At least, not in this case. Dooku is relaxed, and having fun because Anakin is now emotionally hindered. He wrecked Dooku only when Sidious motivated him... Read the source before making assumptions, please.
And Dooku was surprised when Kenobi and Anakin lulled him into a false sense of security, tired him out, and were now ramping things up... Then both got dropped on their arses by Dooku. 👆
