Dooku admitted that it was a cheapshot, and it says that he could've broken out of it.

Dooku does what he initially did to Anakin and Obi Wan, and then beats Maul.

Dooku was playing with Obi Wan, and the novelization makes a note that he went faster and stronger against Yoda than he had against the pair.

Yeah but he still incapacitated him in a single move...

In either case, he took on Obi Wan with a superior combatant that also has substantially better chemistry with Kenobi, and still managed to get it down to a one vs. one with Anakin. I don't see why he couldn't do this now that you've replaced Anakin with a weaker fighter.

In all honesty, Anakin and Obi-Wan, for as long as they've known each other, have horrible chemistry.

They genuinely don't do as well in teams as they do on their own.
