That's the opposite of what Jinn would do.

Maul could possibly have gotten to him, or Sidious. Or the will of the Force would find a different outcome.

But wasn't Jinn some gray-jedi to begin with so why does he care if he threatens Watto?

Jinn was a grey Jedi in that he didn't give a shit about what the council says not because he used both sides of the Force.

Jinn would have cut down Watto where he hovered and taken Anakin anyway.

Hell, he'd have probably raped Shmi before leaving, too.
