Since the Sentinel has been granted every power they used...it's going to win easily. It means it can generate both extreme heat or extreme cold. We all know how the T-1000 handles both of those things: not well.

The Sentinel melted through a bank vault style door in a couple seconds with it's hands using Sunspot's power meaning T-1000 wouldn't be able to touch it if it chose to heat up it's entire body like Sunspot could. Getting stabbed also didn't seem to really bother them too much either, even before gaining the powers from the mutants.
