Well generally whenever people mention knightfall anakin, we always take him to be without his in character mental restrictions.

It would be hypocritical to do this for anakin but not for kyp

Wrong. There's just a lot of disagreement in regards to his mental state at the time. It's not like it's modified for the sake of the match, unless specified.
