I'd like to see something Old Republic related, maybe a new version of the beginning of the Rule of Two and Bane's canon story. Or a canonical version of Plagueis' story.

Also, I'd enjoy reading a canon Boba Fett book, that either explores his bounty hunting career pre-ESB, or confirms that he survived the Sarlaac and explore his story after ROTJ.
