Koon's force feats are what exactly? Ragdolling TCW Boba Fett? Pushing away a few droids? Accidentally using a piss weak version of force lightning? Or collapsing a small tunnel, which even non-dedicated force users like Maul can do with ease.
Plo's hype revolves mainly around his piloting skills and his military mind which don't apply here

Plo Koon is hyped as one of the most powerful jedi ever, has performed significantly better than Fisto, one of the best swordsmen in history, against a superior version of Ventress despite being injured and was held in higher regard than Qui-Gon when pre-prime.
Plo Koon has better hype and scaling than Qui-Gon does.
Mmm some cute accolades you've got there. Shame none of them matter when you're getting man handled by Savage (who's low-mid council master level at best) despite having the help of many Clones. A post-prime Qui-Gon's performance in TPM against a vastly younger and more physically able opponent, is a lot more impressive than Koon getting his ass handed to him by somebody who is definitely inferior to Maul, even at that time.
Ventress had plenty of time to study the way Kit fought and obviously had a massive form advantage. In his fight with Asajj, Plo had the form advantage and what he did wasn't all too impressive. He fended off her saber attacks and TK'd her away, something even early TCW padawan Ahsoka could do.
There are many examples of characters still being able to hold their own against superior duelists whilst injured and Ventress herself is a great example.
