Only feat I remember of Wade's for how fast he was was gunning down his gang in front of the titular train at the film's conclusion. His gang was (understandably) very confused at why their leader decided to shoot them all after they rescued him from Christian Bale's character.
That being said, been awhile since I've watched the (great) 3:10 to Yuma.
I'm going with Doc: dude was far and away the best combatant in Tombstone, all while he was drunk, hungover, and/or suffering from tuberculosis.
