From what I understand, Parasite isn't like Marvel Comics' Rogue, who gains the knowledge and skills of people when she takes or "borrows" their powers.
Moreover, Magneto taps into an energy source that is almost inexhaustible, i.e. the magnetic field of the planet, planets, or heavenly bodies of his choice.
Rogue couldn't take down Magneto even when using the debilitating version of her power steal; I doubt Parasite could do much better.
And if Parasite's power DID allow him access to Eric's magnetic control, he wouldn't know how to use it.
Victory goes to Magneto, after an indeterminate moment of initial shock and recognition of the danger Parasite could pose.
