By the time Thor was going to get Stormbreaker, he alteady knew Thanos had 2 stones and probably would have more so that is why he knew he needed a Weapon to win.
Even on the ship Thor told him he would kill him. The fact this even being debated lets you know while Thanos was a great villain, he was not as powerful as some of you were hoping.
