I don't really remember Shae ever fighting Jedi. Unless you wanna count the KOTE, but at the same time that has many paths as to who she could have fought.
But that said, it's kind of moot since...well she isn't fighting one here.
Jango has better quantifiable feats anyway and she isn't packing anything that Jango hasn't encountered before.
Hell Jango arguably beat someone better in the form of Montross who Jango noted to be the toughest opponent he ever had to face. He also was a candidate for being the template for the Clone Army, suggesting just about equal in physicality to Jango.
The guy was basically Jango's arch nemsis, even noted that a Krayt Dragon was nothing compared to Montross.
