Don't think Plastic Man can win this one, too many variables on Kenshiro's side.
Overall, Kenshiro is too fast to be tagged and has skills and reflexes to predict and dodge Plas's attacks, plus on top of that he has his Muso Tensei which makes him pretty much untoucheable no matter how hard Plas tries.
And of course there is his classic pressure point exploding your body hax.

As for being too fast to hit, well, straight up speedsters get hit, so i’m betting Plas can just spread out/swarm all over the place, and being as chaotic as he is, predicting his movements will be a stretch, no pun intended.
Despite the fact pressure points work pretty much as reality warping Kenshiro it makes Little sense for him to work them on a non humanbody. He is still able to move stupidly quick and is likely to have a few ki moves under his belt, so it all depends on Plasticman's damage soak (which is honestly pretty decent).

This is false equivalency, my friend. What you provided is nothing but magic resistance for Plastic Man, which is good for him, but lacks relevancy here, not only that you tried to imply it is molecular level control, which is nowhere stated or implied in your scan, in fact you don't need to manipulate someone's molecules to turn them into other animals, all you need is cellular manipulation like Kars from JoJo's Bizarre Adventure, who could literally turn his hand into squirrel, and since no molecule level manipulation is mentioned in your scan, than the logical propositon would be cellular control.
And as mentioned previously this is false equivalency, being able to resist one form of hax doesn't grant you ability to resist other forms of hax, turning people into animals and warping your pressure point to make opponents explode are 2 different forms of attack.
Not only that you are too focused on physical aspect of pressure points, which is a common misconception, when it comes to Kenshiro, you see while yes his PP attacks have certain similarity with real-life analogues, but his attacks work by method of your body having TSUBOS ie pressure points where KI is concentrated, what Ken does is send his own KI to those KI points, which makes opponent's own body kill itself, - Plastic Man can turn into anything he wants, but as long as he he has a SOUL/KI energy flowing through his body, he is gonna has TSUBOS, no matter how twisted his shape is, thus making pressure point explosion is inevitable.

That's wishful thinking here, speedsters get hit in comics for obvious reasons, because plot hinders them, you know that very well, so let's not pretend this is something new. And as we know Plasitc Man is not the character with tremendous speed, he has no speed qualifications overall, so saying that he can tag actual speedsters is nothing wishful thinking.
With Kenshiro though, outside of having vast speed advantage,where he is gonna see Plas in slow motion, he still has his Muso Tensei, which makes him untoucheable, let's not forget this, as well as technique called KIKEN, which is basically the same in principle as Ultra Instinct from Dragon Ball franchise, ie subconscious reflex, to dodge any attack without thinking, the same technique KIKEN allows Kenshiro to anticipate attacks based on subconscious reflex as well, so chaotic nature of attacks is irrelevant, since Kenshiro would dodges with subconsciousness rather than conscious part. Also Plastic Man's attack as already implied lacks SPEED to touch Kenshiro, whatever weirdness he tries to pull out it would be meaningless without additional speed to tag the opponent, hence his main problem here.

Ken could copy skills at a glance, which means he should be able to use Falco's molecular disintegration technique.

Yeah, I did consider the possibility of that kind of ki move being used, but I wonder if Ken ever used something similar (it could certainly work).
I assume Plastic Man has nearly infinite endurance against both cutting and blunt moves?
It's not similar in terms of effects, but the long distance pressure point proves he can use ki based moves.
And he was frozen, sliced up into pieces, and left on the ocean floor, so I'd assume you can't really mortally wound him with conventional attacks. Incapatitate, maybe, if he gets popped like a balloon.
