I don’t think so tbh. The amalgam will be placed on the defence immediately and will eventually be overwhelmed.

Shouldnt Dooku + Kenobi be a match for Windu in Sabers though?

The same Windu who took ROTS Sidious in Sabers?

Or are we putting that solely down to Vapaads advantage over Darksiders?

It was due to the unique traits exclusively inherent in Vaapad(ie. the superconducting loop.) That point was solidly established in the novelization.
