At no point in the fight did the fight portray a blinded and crippled Skullcrawler with limited vision.

I think you can show Kong being relentless and stubborn like the Punisher hunting a superpowered villain to make up for the power difference. That would give the battle some great dynamics without betraying what we know these characters from.
