If his shield can stand up to the ship cannon, his gun cranked to 11 will definitely put her down..at least long enough for a victory.

Gamora wins the first round due to a fairly hefty gap in physicals, loses the second due to Cable's offensive and defensive gear being more effective.

^^ Pretty much that. Cable would get mauled in H2H, but forcefield + big phucking gun (which he can mentally recall) + explosives + knives should net him a win in the weapons match.
