Either Steppenwolf is almost as fast as her or her speed was written down for him.
Regardless, we use only a character's highest showings (like you did for QS in the mansion scene).
Steppenwolf is too big a fight and plot point to ignore.
That said, Thanos can easily deflect bullets. Easily.
He will have no issue hitting Wonder Woman. And then slicing and dicing her up.
Steppenwolf isn't exactly slow though. He was fast enough to react to missiles as well, which suggests superhuman reflexes at the very least.

Then, if you factor in size and reach, and that he would generally need to make smaller movements than Diana relative to his size because of that, him keeping up with her isn't such a leap, despite her own speed and reflexes.
If anything, the real outlier is Aquaman being able to keep up with them, IMO, as he doesn't really have many other notable speed/reflex feats that I can recall.

If 2003 Hulk did similar, that's a testament to his own speed and reflexes. Missiles don't become slower based on who is catching them. Plus, according to the VFX guys, that Hulk could also move at 300mph, so he was pretty fast in general.

Anyway, they were clearly trying to portray his speed and reflexes as superhuman, or there would literally have been zero point of him catching the missile, or casually deflecting an Amazonian arrow without even really looking (which, based on the distance those arrows can travel, move at greater velocity than arrows from normal bows).

And that is the point I am trying to make. Not that he is faster and slower than any specific character. But he was meant to be portrayed as operating with at least some level of superhuman speed/reflexes which, coupled with his size, helps explain why he could keep up with Diana.
Eh, I was just trying to provide a logical reason why he could keep up with her. Size + some level of enhanced speed + likely superior strength (she'd have a harder time blocking his blows than vice versa with brute force, which means more deflections etc. or more effort on her part to stop the hits cold, and she would need to adjust the way she fought accordingly as well) would go a great deal in that direction.
