Anonymous research. You can still conduct research and as long as your sample is representative of the population, you can come up with estimates for stuff like this.
It's the basics of statistics. The sampling methods and the statistical power tests used are often subjective and are heavily scrutinized at times. Some "research" is just misuse of statistics and sampling methods to support an agenda.
In this case, it should be common knowledge by this point that sex workers don't usually report violence to the police. It's like an idiot calling the police because someone stole their drugs: it happens, but very rarely.
