Lucy Liu would make a great Psylocke but i would pick Michelle Yeoh from Crouching Tiger Hidden Dragon. She can fight way better than lucy and i think she could really pull it off well.

what about zhang ziyi as psylocke?

She looks too young but i suppose she could be teenage psylocke. The problem is though, she can't speak any english so i think shes out of the question.
