Do you even realize the costs involved in cloning? It's astronomical. You have to pay for parts. Then there's the labor, which they rape you on. And there are no refunds. If the clone comes out f'ed up, you're stuck with it. Bad deal all around.

Grevious looked like a green raptor type thing. He only had 2 arms--the other 2 were from his cyborg body. Yes, despite having just his head and vitals, they coulda cloned him. Just one blood cell contians your entire genetic blue print.
Sidious and Tyrannus wanted a HUMAN host only--one who had NO Force potential. Jango Fett was a renowned and proven Jedi killer with an almost nil midi-chlorian count who's loyalty was to money--he was the perfect template for a clone army.
I don't know exactly but it seems to me that his condition was provoqued by mace at the end of the clone wars cartoons and agravated at the end by obi 1 when the clones arrive to utapau.
