Seriously, superman may have a faster processing brain, but Reed's brain will process things so much better than Clark's that it will overcome his speed every single time.

Because what Moleman or Doom can do have a near infinite amount of possibilities (especially what Doom can do). There are a set amount of ways a chess match can go. And while the number of ways it can play out is incredibly high, for a guy like Reed, it shouldn't be too hard for him to calculate every outcome.

Because Superman can calculate and predict more moves than Reed can. It's not a question of intelligence, more processing power.

You're essentially comparing a super computer (Supes) to a calculator (Reed) in solving a math problem. Not that I agree with your comparison, but we'll go with it, if there's no time limit the difference doesn't matter.
