To recorrect, us Dutchies are mainly in the cow-cheese bizz; Gouda, Leerdammer, Old Amsterdam and such.
Glad you mentioned hotchpotch and peasoup! Winter is coming and so is our appetite for these oddities of cooking. Show a Dutch snow and the first thing on his mind (besides tossing a iced snowball between the eyes of his neighbour) is peasoup. And of course a fine custard by granny's recept after!
But herring! Now that is fast food cuisine. We pick em out of the sea, gut them, salt them and woops in the tummy they go.
