Melitus' question was directed to Azrael, folks, and was not really appropriate for others to answer. He was at no point asking you to define sentience, just asking why Azrael- who had said that a. it was not sentient and b. that real world chickens would be- he is trying to pin down any discrepancy.
Rade has answered simply by saying that chickens are not sentient in general, which is fine. It is just important that I know exactly what differences you think are between Matrix and non-Matrix versions (or, as I note them, a chicken or a chicken*, where the '*' indicates that it is from the Matrix).

"I believe that this 'matrix chicken' is not sentient. It has been programmed to do certain things, but if something that was not in it's code came along, it would not have any clue of what to do. However, if a real world chicken still existed and had the same problem, it would possibly attmept to find a way around it. The real-world chicken at least has the ability to do that, if it doesn't use it."
