I thought it meant that Rowling wanted to say that no magical creature was perfect at looking into the future, that foretelling things was a very imprecise art. Even the best at doing it: centaurs, had been known to be wrong before.
Also, the centaurs see a very grim future for Harry - I thought this meant they thought he was going to die. You always hear about "it being in the stars..." = it's your destiny, your fate, the way it was going to happen before you were born, you have no choice in the matter. But this is one of the important themes in the story. Dumbledore is careful to point out that it is not destiny that is making him want, or indeed need to kill Voldemort, it is the series of events of the past, Voldemort killing Harry's parents, Voldemort attacking Harry himself, etc. Harry DOES NOT have to do this. Dumbledore also is sure to point out that it is our choices who make us who we truly are...
We know that Rowling doesn't believe in Fate with a capital "F," she's said this before, so she probably doesn't put much store into the way centaurs do things - looking into the stars and foretelling the future by their patterns. She's very much into choice and choosing our paths, choosing our own destiny - this line from Firenze begins to touch on that, begins to say that no, predestination is not the way things are going to be in these books.
