I picked up a copy of The New essential guide to characters and it talks a lot about the Stark Hyperspace war...what is it?

I don't know, I just know it's the Stark Hyperspace War where a lot of people die.

The Stark Hyperspace war:

30.5 years before the battle of Yavin

Smugglars were common those days, but they were a small group, not really needed to get "inspected".
One of them, named Iaco Stark came up with the idea of uniting most of them, he succeeded.
They stole all the bacta so that they could sell them at HIGH prices (that and destroying the bactafactory). The Jedi deceided it was time to do something.
The Jedi involved were for example: Qui-Gon, Obi-wan, Quinlan Vos, a few JC members even...
They went with one of the Trade Federation (ow ironie) to talk with Stark, but it was a trap.
Senator Tarkin (not the ANH one) brought an army together and followed the Jedi but Stark placed a bug in the systems, so some would go nova, others ended splatting against a planet etc.
Then Stark and his men attacked the Jedi.

And BTW the Vong war IS somewhere around 20 years a ANH.

Yes but when we get to talking about something it's hard to stop us. And I wouldn't exactly call it garbage. Escpecially when it concerns Chewie's death.

EU is garbage and has nothing to do with Lucas's vision of the films.

And you think starwars.com is canon? They completely endorse EU because it brings them money, not because it means anything(which it doesn't).
