Umm they had someone hold a peice of meat and then they cut at it, while it was being held up...

Right you are! They piled up at least 3 bodies and used the sword on that. If it would not cut through the first cadaver, the blade was rubbish. Cutting through the top carcass and in to the second proved the sword to be of good quality and splitting 3 bodies in one strike displayed a masterfully made blade.
