I know who Hulk is, thanks for the education.
Unless Logan cuts off Thing's arms (which I doubt is possible), Thing will be able to use his arms just fine.
I admit Logan will be able to get a few slashes in, maybe even take off part of Thing's face, but Thing has extremely high pain tolerance and willpower. And once Thing grabs Logan, it's over for Logan.
Thing is definitely getting very injured in this fight though.

one slash from wolverines claws could make things arm completely useless. If logan hits a vain thing will bleed out. If logan hits a tendon thing will be unable to use his arm. If Logan stabbs things arm, Thing arm will be useless to him.

No it not. Even if thing got ahold of logan which would be extremely unlikly he still would not get the win. Logan could still simply stabb him which would not be hard at all.
You are really over estimating things ability to take damage
