Must I point out again that Super Sonic and Shadow are both limited and not by any means standard powers? If you wanna play that way, Link summons the 4 Giants in MM, has 6 fairies, and the seven sages are prepared behind him to cast the 'hogs into a dimensional prison.
And Dark Link is considerably weaker than normal Link. Ganondorf is around the same power as Link, and is still his main polar opposite in the games.
As to the true invulnerability thing, take Super Sonic and jump off of a ledge. See how long he lasts.
And even though Sonic is used to fighting at high speeds, he still handles roughly as well as a car when running fast. So making him run into a sword or shield is perfectly viable. Chaos Lance? Mirror shield. Sonic Wind? Giant's Mask 😄. Anything involving simply running into Link? anything that blocks him stops him long enough for an easy kill. If you give Link actual good assistance, the whole thing gets even easier. I'd give em an even 5/5 with Dark Link, at least 8/10 with Ganondorf.

Link always has all of his weapons and masks. Sonic very rarely has all 7 emeralds. I was adding in random stuff like the triforce, the giants, and infinite magic cuz people were bringing up stuff like super and hyper Sonic. If you want to strip Link of his weapons and masks, strip Sonic of all of his abilities and speed too. So now it's human vs. regular hedgehog. Not fair, right?
And falling off a ledge is the only thing that DOES kill Super Sonic. Other than that he's invincible. Flying? What the hell?
He doesn't keep them though. Super Sonic lasts for a very small amount of time. It's not a regular thing that you can use at any time. Where Link always has all of his weapons. Sonic has speed, Link has weapons. It's their core things.
So I say, if you just happen to give Sonic all 7 emeralds, Link conveniently has all 3 parts of the triforce sitting in front of him.
Link loses his weapons because it's a new game... Skull Kid tricked him and took his weapons.
Fierce Deity is only usable in that fight because you don't get it until then. And using it in other times would be cheap. But Link is always carrying it. Same thing with the Giant's Mask (he wouldn't fit in most palces if he used it). And even without them, he can win... Nayru's Love is an anytime ability.
