Oh, I've seen real people moving their hands so fast that people don't see it before they have told of it. They had to slow down the film when they were making films with Bruce Lee. Magicians move their hands so fast that people don't notice it. Martial artists do that all the time.
That doesn't mean that Wolverine is able to remove the webbing in a second. Spider-Man's webbing has been known to keep the likes of Rhino confined. It's sticky, like bubble gum, he isn't removing it in a second.

That means nothing, its on his face for crying out loud, a slashing movement is different than something that takes dexterity.
