Oh, fo' shoo...It's gotta be 'Goodfellas'. Swiftly followed by 'The Godfather' trilogy with something a little more obscure like 'Miller's Crossing' bringing up the ass. 'Road To Perdition' is good, but it can't hold a candle in the wind to the ones I mentioned. Fair praise should also go to 'Donnie Brasco' and 'The Untouchables' for sheer watchability...
There's a great little movie that's about 3 hours long called Once Upon A Time In America directed by Sergio Leone back in or around 1980 or so. It starred Robert DeNiro and James Woods in a film spanning the 50+ year love\hate relationship between the two as seen from their early days as kids to their rise in the Jewish. One hell of a movie. Also starts Olga Karlatos (the eye splinter girl in Fulci's Zombie) as a theatre girl.

EDIT: by the way, any of you ever seen a Japanese movie called "Tokyo Drifter" ? It's a 1967 film by Seijun Suzuki, and it tells the story of a guy named Viper Tetsu who finds himself on the wrong side of the fence when he's betrayed. Loads of style and a very catchy theme song that epitomizes the 60's gangster flick.
HIGHLY recommemded.
Definately "Witness to the Mob" for me. "Mickey Blues Eyes" is another favorite. I've seen "American Me", it's a good flick about Latino gangsters in L.A. in the 1950's. It seemed more like a mafia movie, as opposed to your typical gang-banger flick. But instead of Italian they speak Spanish, instead of tuxedos they wear zoot suits, and instead of tommy guns they favor sawed-off shottys.
