That being said, Thor knocked out and Mjolnir's enchantment being overridden makes it seem like it was drawn with the goal of pissing of Thor fans in mind. Hulk's even has a rape look in his eyes, I'm genuinely curious as to what the point behind it is.

It wouldn't surprise me either tbh. Marv Wolfman wrote in a series of blog entries ( http://www.marvwolfman.com/marv/Wither_Goes_Marvel_Part_One.html) about the attitude Marvel has developed towards its fans over the years, particularly those that are vocal about character decisions etc. Thor being slapped around by the Hulk is a particular sore spot for Thor fans, so they get shyte like that cover, or banner smacking Thor around with his own hammer. Nova fans harassing Marvel editorial about bringing him back? Fine, here you go, now Nova's back and he's looking like a phucking power ranger etc.
Then again as you said, it could be and most likely is, just a cover...

Non-cannon one shots aren't indicative of how a company feels about a character. Hulk has enough feats to draw on without resorting to shit like this, you need to start having more faith in the character.
By the way, if it were the case, Thor fans would have more ammo to use than Hulk fans.
