The recent spate of KOs that Thor has received have helped to wake up KMC to this obvious fact....
Still, there are some in denial. They will be dealt with once Hulk punches the timeline really hard and corrects the fracture in the timestream.

Hulk is no more "one-dimensional" than Thor or any other character. It's just that most people who dislike the character do so because they hate that he over-powers their favourite character *cough* Thor *cough*. That's all.
Otherwise, and especially so with current Hulk, he is one of the most multi-faceted and adaptive characters going; Using both tonnes of prep and strategy (as both Banner and The Green Scar) to take out his foes as well as in-battle tactics (from using the environment to opponents as ammunition to sensing and honing in on an opponent's weakness and adjusting his strategy to take advantage of it) through out his history.
Yeah, I actually don't care how strong they make the "smashing" aspect of it. But his powers can still be boiled down to healing and strength. Everyone can employ strategy and tactics. The people who hate Hulk hate him because his answer to everything is flexing harder, and the ways in which the strength is shown defies even comic book credulity. He's not always walking fan service for hormonal, angry teenage boys, I realize there's nuance on occasion. But I'd say that's a fair amount of his portrayals in the last 5-10 years.
As a Thor fan, if you're not ok with Hulk smacking Thor around at this point in a H2H battle, you're too into comic vs. battles. But as a fan of the medium and what it can achieve, I feel fully justified in hating Hulk.
I see as many instances of Thor just hammering away more in answer to some threat or other.
Still, you don't see people moaning about how one-dimensional Thor is, even though that's pretty much all he does.
What was he dramatic difference between Thor fighting Bor and Thor fighting Gorr (hell, they're not even trying with the names now, are they?)?
Hammer to the face for the old guy, lots and lots of hammers to the face for the shadowy-guy...
There's even a saying regarding people who carry hammers...

I can't speak for Digi, but in my case him being "one dimensional" is in regards to his powers not personality or back story. Strength and Healing is cool and all but that's it.
Thor and Surfer, despite idiot writers, have a wealth of powers to call upon in any given situation and unlike the case with the Hulk, they don't feel like they were just pulled out thin air to compensate for the Hulk's lack of versatility (power wise).

Surfer's the only herald that does utilise a variety of means, on a fairly regular basis.
I don't see Thor's fights as being all that different from Hulk's, maybe throw in a little lightning (but then, Hulk can ThunderClap) and you have pretty much the same type of performance.
As for the nature of Hulk's powers, well that too is misunderstood (and deliberately I would say) by most of those who moan about it constantly.
He's never been the "brick" that people want to imagine him as. He has always had powers that defy the logic of a purely physical character. From direction-changing mid-leap, to Bullseye-like accuracy and Mjolnir-like energy absorption (remember, back during Onslaught Saga, he was walking round with a whole universe of energy flowing into him).
Hulk's always had the ability to render dimensional barriers, to resist (and re-emerge from) matter manipulation ...
It requires a great deal of denial to not see that he's more than just a brick and that Marvel have always been clear about that ...
