Even if I would believe in souls, which is fundamental for some forms of Zombies, I would argue that the "Zombies" of 28 Days Later still have their soul as it is a chemical imbalance that makes them kill and such, they aren't really dead by any definition of the word I know.
I suppose there could be Zombies that are not dead physically, but soulless. I can't think of any instance in fiction though.

And also, the 28 Days Later 'Zombies' aren't braindead either, they're just Infected with the disease which makes them want to eat people. But how can they tell who is Infected or not, why wouldn't they end up attacking each other?
