First off, Dooku was said to have been able to defeat Sidious in LIGHTSABER COMBAT and that only.
Second of all, Sidious was one of the most INTELLIGENT and MANIPULATING Warriors of all time.
Not the most powerful. He is far from the most powerful.
Powerful Sith were not cowardly.
