My point with this is, with SW we can't assume that the attacks are moving as fast as they are shown to us onscreen, blaster bolts included. If Sidious is indeed far faster than your average jedi such as Kenobi, who can casually dodge blaster bolts, then he should be way out of Voldemort's league in speed. The speed of his attacks are such that he can cut down force users who possess superhuman reflexes before they can react, so he can likely attack Voldemort before Voldemort knows what's going on. Hell, even the speed in which he was hurling automobile-size senate pods was such that even Yoda had trouble dodging them and lost his balance in the process. Of course from our perspective the senate pods didn't look as if they were moving that fast, but when we consider that Yoda is a lot faster than the likes of Kenobi, who had no trouble evading blaster bolts, then we must conclude that logically the senate pods were being thrown pretty damn fast.
Didn't you miss a small point there?
The Jedi aren't supposed to "move super fast". They have precognition that allows them to react to things that have not yet happened, which allows them to perform feats that ordinary humans wouldn't be capable of. That is how Qui-Gon explains the superhuman reaction speed of Anakin in TPM. If you can start dodging a bullet, before it is even shot, because you can predict when it will be fired, that hardly qualifies as argument for your superior movement speed, does it? They simple aren't moving around on "speedblitz" pace through the entirety of every fight they enter, which is already obvious from the fact, that a shitload of Jedi / Sith has been challenged / killed by non-force-user in direct confrontation.
And TPM shows another scene quite crucial for this topic: Obi-Wan and Qui-Gon using Force Speed to escape from the Droideka. We can see how fast they can move when focusing on nothing but movement speed but even taking that as a reference, the Wizards in the HP movies in their semi-corporeal "cloudforms" move faster than that.
Watch from 2:30 onwards. In case you're not familiar with the issue: The black clouds are Death Eaters (Voldemort's servants essentially) and the lightning flashes you see are fired spells. Not only does that flying form enable the Death Eaters to move quite fast, the spells are also fired at what appears to be bullet speed. And cause much more destruction than a bullet impact, when we consider how larger bits of the building are blown away and the first floor does collapse after 30 seconds of attack. You may also want to take a loot at this:
As you can see, there isn't much to be seen in the form of spells other than them being fired (glow) and the impact (glow). We don't get much "spell bolts", like the blasterfire seen in Star Wars. Also notice that the winner here (the one not ending up being blown into tiny bits) is one of the good characters in the saga, with the "bad" characters doing most of the actual lethal spell-casting. And when we see bolts...well:
Notice how those spell impacts generate rather huge explosion and even when Snape (the male character, fyi) tanks most of the energy, even some glancing hits by the remaining energy are enough to floor (kill?) the duo behind him. And you may want to count: McGonagall fires a dozen of that spells in seven seconds, which not that shabby, considering the effect of those attacks.
On a sidenote: Snape's exit from that scene is a rather badass move, imho.
