Dooku goes down. Maul alone is close to Dooku in terms of saber skills and Asajj isn't far behind him, either. Both are physically stronger and more fit than he is, there's no way he could take them, even with the Force I doubt it, though it'd be close then.
He is leagues above them both in terms of duelling ability.

Without the force then yes, Dooku wont be able to cope with them both at once. But with the force I can see him taking it with relative ease. He took on both Obi-Wan and Anakin and managed to keep up with them both. Plus A+O are a stronger duo than A+M. So with the force Dooku can just seperate them and kill them one by one.

If Dooku is allowed to use the force to overcome his age I can see him winning. He is leagues above them both in terms of duelling ability. If he cant use the force to overcome his age I doubt he will win. He isnt strong or fast enough to keep up with 4 blades at his age.

Last time he fought Ventress he toyed her like crazy. She grew in power alot since then though. Grievous defeated Assaj and Durge at the same time, and Dooku was better than Grievous, and that was when he was trying to lecture him and mostly defended. Not going with A>B>C=A>C, but I think it's pretty obvious he is superior to her.
Maul is good, very cocky though. I'd put him and Assaj on close levels in swordsmanship. These two take up alot of room with their fighting styles and their weapon of choice. I don't belive they would make a good team AT ALL! If Dooku is able to keep up with Anakin and Obi-Wan (which both on their own is better than Maul and Assaj, and as a team they were known as THE jedi duo) I'm sure he would be able to at least keep up with Maul and Assaj....

Well I must say that Nick Gillard hasn't got authority for anything when he is talking about their power level, he is not a source at all, it is his opinion. And the fight on the Invisible hand was going to be very long, they just cut out most of the part. In the novelisation it is much longer...
I would say it is hard for Dooku to win, cause both these are very good swordsmen and there is no force powers allowed. Dooku could win if he outmatches them, and places them in bad positions together, which would force them to have to cooperate, which means they probably couldn't go all out and that shit.
