Let me first state that I in no way, shape, or form, doubt LT's power. I believe that it IS within his capabilities to create a universe if he felt the need. I do however see why some might be skeptical regarding the Surfer scans. For instance....
1.The scan where you say that his structure is changing and he is becoming translucent, could also be interpreted as light emanating from LT,and reflecting off of Surfer(notice that there are shadows across Surfers back, suggesting that the light is coming from a fixed source in front of Surfer)
2. The scan where you say his form is being manipulated and he is becoming light, could be interpreted as the light coming from LT intensifying to the point that it actually passes through Surfers body, making his skeleton visible. Now the intensity of the light would have to be unreal, because it is the Silver Surfer after all, but with the amount of power being used here, it's not inconceivable.
3. The scan where you say that Surfer explodes into a universe, could be interpreted as the light becoming so intense, that you cannot see the Surfer anymore, kinda like inserting a small object into your view of the sun.
4. The scan where you say the Surfer actually expands into a universe, could be interpreted as a view of all that Surfers now connected to.
5. Your scan of Surfer being connected to the infinite is defiantly that, but some might see it as him being enraptured by the experience, with the stars that were already present around him and LT reflecting off his silvery skin.
Like I said before, I'm NOT disagreeing with you so you have no need to defend your stance to me, I'm simply trying to show that since it's not EXACTLY stated in the narration, some might interpret it differently than others.
I'm not trying to but in, I was just trying to clear up the confusion between the opposing viewpoints.

Apart from the Fact that LT's transformation of the Surfer seems more concrete and definitive than Thanos's, though you'l concede Thanos was Eternity.
