I think ever since COTBP, little by little is learned about Jack. I think the first clue is that he saves Elizabeth, which is the film's way of showing us he really is a good person deep down. He keeps revealing more about himself that deepens his character, like the one bullet he has saved, and that according to Gibbs, being betrayed by his crew really changed him. It made him keep his real self hidden more and the sequels spent that time unraveling him. It's part of why he's such a great character. Johnny really lucked out getting such a sweet role, and the movie lucked out getting such a deserving actor.
PS: Slightly off-topic, but I need to warn my peeps...do NOT see Strange Wildnerness. I saw it tonight not really knowing what it was and it was hands-down the WORST movie I've ever seen. Stick with POTC.
