Yes, Plo would stand a chance against Ventress. The only Ventress he might not be able to beat is Obsession Ventress.

That point is not evidence for Dooku winning. Not seeing something coming in a duel is a way of losing. If Plo Koon did something similar to that, Dooku would lose. A saber can slash anywhere someone wants it to slash if not seen, and I'm pretty sure it's allowed.

No sh*t. So what point are you making? Dooku will be the victor. The rest is just detail.
