Koon's a master, so I definitely don't think it'd be a horrible loss on his part, but I think he would lose. Dooku's pretty powerful in the force, he's not a Yoda or a Sidious, but he's pretty powerful, and his lightsaber style was pretty much built to kill Jedi/Sith.
