But in practice, as in popular US language, being a lesbian means you are only attracted to females, being attracted to both (You can prefer one gender to another, your standards for interaction with one may be higher) typically refers to bisexuality.

Frankly, if the girl defines herself as a lesbian, then she is, even if she may be going out with a guy at that moment. I won't tell someone else how they are to define their sexuality.
It is possible to be primarily sexually attracted to one gender/sex (the two are different), but to find yourself attracted to someone of the gender/sex that you generally do not prefer. I personally identify (most of the time) as bisexual, though when it comes to sexual attractions, lesbian is probably closer to the mark - I do not find myself attracted, sexually, to guys. It is very rare that it happens. But on the flipside, I don't tend to have romantic attractions with girls, only guys, hence why I lean more towards defining myself as bisexual; that doesn't even cover the fact that most of the time I don't feel any sort of attraction at all. And sometimes, there are exceptions to the rule.
Gender and sexuality are rather complicated things that defy all sorts of traditional definitions, and everyone is going to define themselves differently. Let someone decide what they are, and worry about just yourself.
