Rangers can choose between archery or dual wielding, yeah. And it's what you'd expect, being an expert hunter and tracker, and can choose a certain type of creature they're especially good at hunting. Good with animals and has a little nature based magic.

It's more knight and less magical, since they don't get many spells. Though Paladins can sense evil around them and channel pure JUSTICE! into some of their attacks for extra damage to evil creatures. They can also do a little healing and cure diseases and stuff. However, if they commit an evil act they lose their powers.

Nothing stops you from using both styles, but you only specialize (i.e: get bonuses) in one. Human is indeed a viable choice for hunting. Spells include mostly support stuff and controlling plants/animals.
I don't know about king or emperor, though.
