Yeah, IMO, the Hippocampus that attacked Kratos isn't what shot up Mt. Olympus. That was Poseidon in his Water Construct, even though it looks like it was a Hippocampus.
The Hippocampi function as his limbs in that form, and are connected to him. So there would be no way for all of them to shoot up the entirety of Mt. Olympus, given that their actual length looks to be far lesser than the value of Mt. Olympus' height.
This is further supported by the mini-hippocampus that appears in the Intro cutscene in GoWIII. It is shown emerging from his body.
