While both the anime and the manga are considered Dragonball, it is the manga that is considered canon over the anime. This is due to the fact that the anime does not follow the manga as accurately and includes filler. In areas where they disagree, you go with the manga. This is the standard view for most things. Go with the original source.

as much as i like dbz as a cartoon i agree that manga is canon while the anime is not (well, since most of the events follows the manga, its kinda canon storywise).

Most of the movies are also canon only unto themselves. as they don't fit into the timeline of the anime either. Like movie 12 with janemba. there wasn't a time during Z that both Goku and Vegeta were dead at the same time and not dealing with a major threat such as buu.
