So the basic problem is that she just doesn't exactly believe you have that job lined up?
Have you tried just sitting down, and tried to calmly tell her the whole situation, and plans? Maybe she'd like to talk with your mutual friend, or have some actual or tangible evidence of the job..... She most likely just wants to be positive you do, rather be safe than sorry.
